Chicken Marengo








Ingredients

This recipe serves four people

4 chicken breasts skin removed.

1 onion cut in to small dice

2 cloves garlic minced

½ Red pepper cut in to dice

½ Green pepper cut in to dice

100gr Mushroom sliced

1 Carrot cut in to small dice

1 Tin of chopped tomatoes

100ml white wine.

Flour

1 Tbs of Honey

2 Tbs Tomato Paste.

1 Tsp dried oregano

1 bay leaf.

4 Tbsp Olive oil

Method 

Coat the chicken breast in flour and fry in a medium hot pan until both sides are golden remove from the pan and lay in a roasting tin.

Fry the onion until soft, now add the garlic and fry for another minute.

Add all other ingredients and bring to the boil then thicken with cornflour with a little water added to it.

Pour the sauce over the chicken breasts, cover with foil and cook in a pre-heated oven of 140 to 150 degrees Celsius for around 40-50 minuets or until the chicken is cooked and serve.

This chicken sauce can be served with fried rice, boiled Jasmine rice, boiled Basmati rice, Mashed potato, Lyonnaise potato, etc.
