  WHITE BREAD Ingredients:   360g all-purpose flour 1 Tbsp. instant yeast 2 Tbsp. sugar 1 tsp. salt 1 cup lukewarm water 20g butter 2 tsp. vanilla essence   Instructions: In a large mixing bowl, combine the flour, yeast, sugar, and salt. Add the lukewarm water and olive oil to the dry ingredients, and mix until a dough forms. Knead the dough for 8-10 minutes, until it becomes smooth and elastic. Cover the dough with a clean towel and let it rest for about an hour, until it doubles in size. Preheat the oven to 180 to 190 degrees Celsius. Punch down the dough and shape it into a loaf or buns. Place the loaf or buns onto a greased baking sheet or into a greased loaf pan. Cover the dough again and let it rise for an additional 30 minutes. Use a sharp knife to make a few shallow cuts on the top of the loaf (optional) Bake the bread for 30-40 minutes, until it is golden brown and sounds hollow when tapped on the bottom.   Meat Pie Ingredients 400 flour 200g margarine 60g carrots 100g Irish Potato 400g Minced meat 2 Medium onions (Chopped) Curry Powder Thyme Soy Sauce Salt Pepper (black or ground Chili) Seasoning 2 Eggs for egg wash Vegetable oil Water SAUCE PREPARATION 1.    Peel Irish potato and carrots and dice into cubes and set aside. 2.    Add 4 tbsp. of vegetable oil to the sauce pan and sauté onion. When the onion is caramelized, add minced meat, seasoning and spices and sauté for 3 minutes. 3.    Add diced carrots and Irish potato and 200ml of water cook and simmer until potato and carrots are tender. Give it a turn and let it cool down completely before use.   PASTRY PREPARATION   Sieve flour into a bowl, add margarine, salt and rub into a crumby texture.   Add cold water and combine flour gently.  SCALLOP POTATO  Ingredients: 6-7 large potatoes 2 tablespoons butter 1 onion, finely chopped 2 cloves garlic, minced 2 tablespoon all-purpose flour  2 cups milk 1 teaspoon salt 1/2 teaspoon black pepper 1/2 teaspoon dried thyme 1/2 cup finely grated cheddar cheese 1/4 cup Parmesan cheese 1/4 cup breadcrumbs Directions: 1. Preheat the oven to 190 degrees Celsius . 2. Peel the potatoes and slice them thinly.  3. Melt the butter in a large skillet over medium-low heat. Add the onion and garlic, cook until softened. 4. Sprinkle the flour over the onions and garlic and stir until the flour is completely combined. 5. Pour in milk and stir constantly until it comes to a simmer. Cook for 2-3 minutes until the sauce thickens. 6. Add salt, pepper, and thyme to the sauce. 7. Grease a baking dish. 8. Layer half of the sliced potatoes on the bottom of the baking dish. 9.   BAKED CHICKEN WITH ROSEMARY  Ingredients: 4 chicken portions 2 Tsp. salt 2 Tbsp. olive oil 1 Tbsp. dried rosemary 1 Tbsp. grated lemon rind Seasoning Lemon wedges to garnish Instruction: Sprinkle chicken portions with salt, seasoning and rub in. Brush olive oil over chicken portions and sprinkle with rosemary and lemon rind. Allow to rest for 45 minutes to one hour. Preheat oven to 180 degrees Celsius. Place chicken pieces in a shallow oven-proof dish and bake for 35-40 minutes. When ready, take out from oven and serve garnished with lemon wedges

  MOROCAN ROAST LAMB LEG Ingredients: 1 leg of lamb, approx. 2.5kg  1-2 tablespoons mint sauce Juice of 2 lemons  2 garlic cloves, minced  6 tablespoons olive oil  Bunch fresh coriander, chopped  Instructions: Make incisions all over the leg of lamb, and then mix the mint sauce with the lemon juice, oil, minced garlic and coriander.  Using your fingers, push pinches of the mixture into the holes.  Rub the remaining aromatic paste over the lamb and then put it into a large freezer bag, squeeze out any air and then tie it up and leave it to marinate in the refrigerator overnight. Pre-heat the oven to 200 degrees Celsius, and take the lamb out of the fridge to come to room temperature. Put the leg of lamb into a roasting pan, squeezing any marinade out of the bag over the meat.  Roast the lamb for about 45 minutes and turn over the other side and let it roast for another 45 minute, by which time it will be aromatically browned on both sides and take out from oven.   Chicken Marengo Ingredients This recipe serves four people 4 chicken breasts skin removed. 1 onion cut in to small dice 2 cloves garlic minced ½ Red pepper cut in to dice ½ Green pepper cut in to dice 100gr Mushroom sliced 1 Carrot cut in to small dice 1 Tin of chopped tomatoes 100ml white wine. Flour 1 Tbs of Honey 2 Tbs Tomato Paste. 1 Tsp dried oregano 1 bay leaf. 4 Tbsp Olive oil Method  Coat the chicken breast in flour and fry in a medium hot pan until both sides are golden remove from the pan and lay in a roasting tin. Fry the onion until soft, now add the garlic and fry for another minute. Add all other ingredients and bring to the boil then thicken with cornflour with a little water added to it. Pour the sauce over the chicken breasts, cover with foil and cook in a pre-heated oven of 140 to 150 degrees Celsius for around 40-50 minuets or until the chicken is cooked and serve.
